Tiramisu Cake for Angelina's Birthday
I'm such a bad liar. Trying to sneak this cake into the restaurant we all went to and hide the gifts was so difficult, and Angelina was definitely onto me!
I made this cake with my standard Victoria sponge recipe, soaked in a simple syrup made with a hint of coffee, vanilla and rum essence (I made it non-alcoholic as two of the girls at the gathering don't drink- the rum essence gave it a good flavour instead of using marsala wine). The filling and topping was made with 400g mascarpone cheese, whipped with 150ml double cream and about 4tbsp sugar.
We also gave a slice to our waitress that evening, who was such a good sport in helping us hide everything and bring the cake out (she was awesome).
