Baked Matcha Lava Doughnuts Recipe and GLOBAL GIVEAWAY
I've had the pleasure of collaborating with Encha matcha, who sent me some goodies to offer up for my 3,000 followers global giveaway on Instagram. They also included some matcha for me to play with, so I came up with this recipe for matcha lava doughnuts especially for them!
This is sort of a 'cheat's lava cake' recipe, as instead of part-baking a solid cake to get the lava sauce inside, you're baking a doughnut-shaped cake and then making the lava sauce separately to put in the middle.
Makes 12 doughnuts.
Ingredients for Doughnuts:
200ml milk
1 egg
50g unsalted butter, melted
100g caster sugar
220g self-raising flour
6g (about 1 tbsp) matcha powder
Pinch of salt
Ingredients for Lava Filling:
100g white chocolate
2 heaped tsp matcha powder
50ml double cream
Ingredients to Decorate:
50g white chocolate, melted (no need to temper!)
200ml double cream, whipped
Extra matcha (for dusting)
Gold leaf (optional)

Method:
1. Preheat the oven to 180°C and lightly grease your doughnut pan.
2. Place the dry ingredients into a bowl, lighty whisk the wet ones together and pour wet into dry, stirring with a balloon whisk until just combined (don't over-stir or you'll get tough doughnuts).
3. Fill a piping bag with the batter, and fill your moulds about 1/2 of the way full (you may need to do two batches depending on your pan). Bake for 15 minutes, and leave to cool completely.

3. Fill a piping bag with the batter, and fill your moulds about 1/2 of the way full (you may need to do two batches depending on your pan). Bake for 15 minutes, and leave to cool completely.
4. Melt the white chocolate over a double boiler and stir in the matcha. Stir in the cream until smooth, and leave to cool to room temperature (don't chill or it will solidify).
5. When you're ready to serve, assemble the cakes on a plate, sticking them down by piping a little melted white chocolate on the bottom. Decorate the top of the doughut with a little more melted chocolate. Fill the centres with the lava filling, before piping the whipped double cream on top. Dust with matcha and stick a little gold leaf on the cream.
