Matcha Ricotta Pancakes – Recipe
For pancake day, I decided to make my favourite kind of pancakes – ricotta pancakes – with a matcha twist. Of course.

Ingredients:
2 eggs, separated
2 tbsp caster sugar
180g ricotta
100ml milk
Pinch of salt
120g self raising flour
1 tbsp matcha
Method:
1. Whisk the egg whites in a large bowl until they for stiff white peaks, and the whisk in the caster sugar until glossy.
2. In a separate bowl, add the ricotta, egg yolks and milk, and sift the salt, flour and matcha in. Stir well to combine.
3. Mix a spoonful of the meringue mixture into the matcha mixture to loosen up a little, then add the rest of the meringue, folding in carefully, keeping as much air as possible.
4. Lightly grease and heat a frying pan with a lid. Dollop the pancake mix on, cover, and cook for two minutes. Flip, cover and cook for a further minute.
5. Plate the pancake up and repeat until it's all used up.
6. Serve in a nice, tall stack with a little extra ricotta, dusting of matcha, fresh berries, and a good drizzle of honey.
