Matcha Magnum Ice Cream Without Moulds Recipe
After making my ice cream sandwiches on a stick, I realised I could actually just pipe the filling to make a bootleg Magnum without a mould. And me being me, I had to add matcha to it this time.
Making matcha 'Magnum' ice cream without moulds, you just have to make a no-churn ice cream batter thick enough to pipe into the shape you want. These are, by no means, perfect, but they're a great quick fix and you only need a handful of ingredients.

(Makes six ice creams.)
Ingredients for Matcha Ice Cream:
1/3 can condensed milk
2 tbsp matcha
Tiny pinch of salt
300ml double cream
For the Matcha Chocolate Coating:
350g white chocolate
2 tbsp matcha
Method:
1. To make the ice cream, gradually stir the condensed milk into the matcha in a bowl until combined.
2. In another bowl, whisk the double cream with the salt until it forms soft peaks.
3. Add the matcha milk mixture to the cream and whisk until it forms stiff peaks.
4. On a tray lined with non-stick baking paper, foil or silicone, pipe half of the cream roughly into six magnum-like ovals, leaving room for the sticks. Gently press in a wooden lolly stick into each, leaving enough to hold onto free at the bottom, and pipe the rest of the cream on top.
5. Freeze overnight.
6. To make the matcha white chocolate, add the chocolate and matcha to a heatproof bowl, set over a pan of simmering water (making sure the bowl doesn't touch the water), and stir until melted. For a snappier-set chocolate, you can temper it (see how I make tempered matcha white chocolate here). But you don't have to for this recipe.
7. Pour the chocolate into a mug, and dip your frozen ice creams, using the sticks as a handle. Give them a good shake to shake off excess chocolate back into the mug. You may need to spoon the chocolate over the last one or two ice creams as the level goes down and it becomes harder to coat the whole ice cream.
8. Pop back in the freezer to set the chocolate for a few minutes, and eat when you like.
