Cheat's Banana and Apple Eve's Pudding Recipe
My easy cheat's banana and apple Eve's pudding skips a whole step and about half an hour of cooking time.
A regular Eve's pudding is apples baked under a sponge layer. Usually that involves peeling, coring and chopping apples before cooking them with sugar in a saucepan. Only then are they layered under a sponge cake batter and baked, or the sponge cake will cook before the apples do.
I cheated with my Eve's pudding by using pre-made apple pie filling from a can. I also added some banana slices because I had an old banana hanging around and wanted to use it up – it actually worked really well together with the tangy-sweet apple filling.
All in all, it only took about 45 minutes from mixing to eating.

Ingredients:
A chunk of unsalted butter (for greasing the tin)
1 tin of apple pie filling
1 banana, sliced
115g unsalted butter, softened at room temperature
115g caster sugar
2 eggs
115g self-raising flour
Pinch of salt
1 tsp vanilla
Method:
1. Generously butter an 8x8" baking tin with unsalted butter, and preheat the oven to 180°C.
2. Spoon the apple pie filling into the bottom of your prepared pan, and lay the banana slices over it, spacing them evenly apart.
3. Beat the 115g of butter with the sugar until creamy, and beat in the eggs, followed by the flour, salt and vanilla.
4. Dollop your sponge cake batter over the apple and banana in the tin, and smooth down with the back of a spoon, a spatula or knife. Bake for about 20 minutes, or until golden brown and springy.
5. Leave to cool for about five minutes before serving warm with custard, cream or ice cream.
