Gluten Free Pandan Mochi Waffles Recipe
My gluten free pandan mochi waffles recipe is delightfully soft and chewy on the inside and crisp on the outside.
Unlike my crisp and fluffy waffles recipe, these mochi waffles use glutinous rice flour instead of wheat flour. This gives them a delicious softly chewy texture on the inside, while retaining a nice crisp exterior. And because they're made with rice flour, this is a gluten free waffle recipe.
Obviously, this is a recipe for pandan mochi waffles, but you can omit the pandan paste entirely to make plain gluten free mochi waffles. I've done this a few times when I want a neutral mochi waffle and they're still delicious.
To make these mochi waffles, using the right type of rice flour is essential: make sure you're using glutinous rice flour, or sticky rice flour. Plain old rice flour won't have the same bouncy mochi-like chewiness.
Feel free to serve your pandan mochi waffles however you like – with ice cream, with syrup, with a chocolate dip, with yoghurt – anything goes. They're just as versatile as classic waffles.

Ingredients for Pandan Mochi Waffles:
175g glutinous rice flour
60g caster sugar
2 tsp baking powder
Pinch of salt
1 egg
20g unsalted butter, melted and cooled
190ml milk
1 tsp pandan paste
Method:
1. Stir together all the dry ingredients in a pouring jug.
2. Add in the egg and unsalted butter, and gradually stir in the milk until smooth.
3. Stir in the pandan paste until well combined.
4. Brush a little vegetable oil on your waffle iron if needed and preheat it.
5. Cook the waffle batter according to your machine's instructions.
6. Place your waffles on a wire rack to keep them crisp between batches.
