Pistachio Lava Cakes Recipe

With only six ingredients (five, if you don't count the tiny pinch of salt, this easy pistachio lava cakes recipe is perfect for a quick dessert.


These pistachio lava cakes only take about fifteen minutes to make from start to finish. Because, by nature, all lava cakes are a type of intentionally underbaked chocolate cake, and because these are small cakes, it only takes around eight minutes to bake them.

I used white chocolate and sweet pistachio cream/pistachio creme for this lava cake recipe, which are both pretty sweet. So, unlike other lava cakes I've made, I didn't add any extra sugar to the cake batter, and the sweetness level was perfect.

This recipe makes two pistachio lava cakes so it's perfect for date night – but if you want more, just double or triple the recipe. And if you just want one, make this recipe but don't bake one of them, instead covering it with clingfilm while in its pudding tin and sticking it in the freezer to defrost, bake and enjoy at a later date.

(Makes two pistachio lava cakes.)

Ingredients:

80g white chocolate
40g unsalted butter
70g pistachio cream
1 egg
25g plain flour
Pinch of salt
A little extra butter (for greasing the moulds)

Method:

1. Generously grease two mini pudding moulds and line the bottoms with discs of greaseproof paper.

2. Place the chocolate and butter in a heatproof bowl and set it on a pan of barely-simmering water (making sure the water doesn't touch the bottom of the bowl). Melt the two together.

3. Take the bowl off the heat and stir in the pistachio cream, followed by the egg and the flour.

4. Divide the mixture between your two pudding moulds, and place in the freezer to chill for 30 minutes.

5. A few minutes before your chilling time is complete, preheat the oven to 220°C.

6. Bake the lava cakes for about 8–10 minutes, until only just set on top.

7. Carefully release your cakes by sliding a knife around the edges, inverting on a plate, and serve immediately with clotted cream and strawberries (or your choice of berries and cream or ice cream). And also a sprinkling of chopped pistachios, if you like.
