Leftover Christmas Cake Waffles Recipe
Leftover Christmas cake waffles are a quick and tasty way to use up leftover Christmas cake hanging around on those days before the New Year.
This is one of the easiest ways to use up leftover Christmas cakes and one of the easiest waffles recipes too: just stick everything in a blender and cook. Perfect if you're tired after a few days of partying during the festive season and need a quick breakfast while disposing of (but not wasting) leftover Christmas cake.
As waffle recipes go, this is quite a sweet one, and on the soft, cake-y side. These Christmas waffles are lovely served hot with ice cream, or even a bit of leftover brandy butter.
You can also dust some icing sugar over the top of your finished waffles for an extra snowwy effect.

(Makes four waffles.)
Ingredients:
300g Christmas cake (without icing)
75g plain flour
2 tbsp light muscovado sugar
1 tsp baking powder
Pinch of salt
2 eggs
30g unsalted butter, melted and cooled
230ml milk
Method:
1. Simply place all the ingredients in a blender and blitz until smooth.
2. Cook the waffle batter according to your waffle machine's instructions.
3. Serve with your favourite toppings.
