Banana Bread Waffles Recipe

I'm not above eating banana bread for breakfast, but this banana bread waffles recipe is for times when I want to fool myself that I'm not eating dessert for breakfast.


For proper banana bread waffles that taste like banana bread, it's important to use a banana that's as ripe as possible – super yellow with plenty of brown spots. The more brown spots (without being actually bruised or rotting), the better.

I like to serve my banana bread waffles with an extra banana that I've sliced, sprinkled with a little extra sugar and caramelised with a cook's blowtorch. It's just a little extra effort but it elevates the whole dish to almost 'restaurant brunch' level.

Ingredients:

1 large very ripe banana
150g plain flour
30g caster sugar
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Pinch of salt
2 eggs
60g unsalted butter, melted and cooled
230ml milk
1 tsp vanilla extract or bean paste

Method:

1. Peel and mash the banana in a small bowl, and set aside.

2. In a large bowl or pouring jug, combine the dry ingredients.

3. Make a little well in the centre of the dry ingredients, and crack the eggs in the centre. Dump in the mashed banana, pour in the melted butter, and gradually stir in the milk bit by bit to avoid lumps.

4. Stop stirring as soon as everything's mixed together to keep the batter light and avoid activating the gluten in the flour.

5. If you need to, brush a little vegetable oil on the inside of your waffle iron (mine doesn't need this as it's non-stick enough). Preheat your waffle iron and cook the waffle batter according to your machine's instructions.

5. To keep the waffles crisp before serving, turn them out onto a wire cooling rack.

6. Serve with your favourite toppings.
